Tonight’s dinner was Sopa de Elote (corn soup), a recipe from one of my very favorite cookbooks, Fonda San Miguel: 30 Years of Food and Art, but Miguel Ravago and Tom Gilliland. . The soup itself is very simple. It’s a puree of fresh corn, cut from the cob, thinned with whole milk and simmered with a generous amount of butter. You serve it ladeled into bowls adorned with roasted poblano chiles, Monterrey jack cheese, and crispy fried tortilla strips. . It’s a recipe I have made a million times, but tonight I tried something different. After I cut the corn from the cobs, I simmered them in a stock pot with water for about an hour. Then I removed the cobs and reduced the resulting corn stock until there was just about a half a cup of liquid remaining. From there I added the corn, milk, butter and simmered as usual. . It’s a small modification to the recipe that extends the cooking time quite a bit. It certainly isn’t necessary, but if you have the time, the result is a soup with a deeper corn flavor that makes the most of the ingredients. To me, it was the best sopa de elote I have ever made. MDW continues with Greek burgers, broccoli salad (@cookieandkate) and my go-to sweet potato fries. Check out my burger recipe below! . . Ingredients 2 lbs grass fed, finished ground beef 1/3 cup finely diced red onion 1/3 cup grated zucchini and/or carrot (drained of excess liquid) 1/4 cup chopped mint 1/4 cup chopped parsley 1/4 cup crumbled feta 1 tbs olive oil 1 tsp salt 1/2 tsp pepper . Directions 1. Add all ingredients to large bowl and combine well with hands. 2. Form into 8 thin patties. 3. Heat grill over medium high heat. 4. Grill 4-5 minutes per side. .

However in absence of lots of non veg options these days, I got motivated to prepare this absolutely delicious veggie. Recipe: 1. Cut and clean the jackfruit into cubes and stir fry it in a pan with mustard oil and keep it aside. 2. In a pressure cooker, heat up some mustard oil and add whole spices, bay leaves, cloves, cardamom, cinnamon stick, pepper corns and saute them. 3. Add onions and green chilli paste and fry them till the colour changes. 4. Add the masalas in the following order, salt , turmeric, cumin powder, coriander powder, pepper powder, Red chilli powder and garam masala. Fry them and let the masalas cook, add some water if required. 5. Add the fried jackfruit in the masala and cook them together. Once they are done and become soft , pressure cook it till one whistle. 6. Finally garnish it with some ghee and coriander leaves. Red, White and Barbecue❤️💙🇺🇸 : : My husband lost his Mother when he was only 16 yrs old so I never had the privilege of meeting the woman who was responsible for raising such a wonderful man. John remembers several dishes that his Mom made and thinks back at them so fondly. I learned how to make her baked beans before we got married because he loves him so much. He still does. And now so do our kids. And they are still the only recipe for baked beans I would ever consider making : : : BBQ Ribs with Baked Beans and Potato Salad : : : : 2 (28oz) can of baked beans 6 slices of bacon 1 large onion sliced 2 clove garlic chopped 1/2 cup ketchup 1/2 cup brown sugar 1/4 cup Dijon mustard 1 tbls sriracha 1 tbls cider vinegar . . Preheat oven to 350F Fry up the bacon until crisp. Remove bacon from pan and to the drippings, add onion and garlic and cook until softened. Add everything else to the skillet. Mix to combine. Check for seasoning. Add the bacon back to the beans. Cover the skillet with foil and bake for 1 hour. Or pour the beans into a casserole dish. Cover with foil and bake 1 hour. . *you can control the taste! (If you like more spice, add more Dijon or sriracha. Celebrating SHRIMP SUNDAY🍤with Red Curry Coconut Shrimp over black rice! I’m still trying to figure out what we will make tomorrow for Memorial Day🇺🇸I’ve seen so many delicious, festive ideas on here so hoping to get some inspo🙌🏻Recipe for the red curry shrimp: For the rice: 1 cup black rice 2 cups of chicken broth or water For the curry: 3 cloves of garlic, minced 3 green onions, sliced thin 2 carrots, sliced Snow peas 1 pound fresh shrimp, peeled and deveined Red pepper flakes, 1-2 pinches 1 T curry paste 2 T sesame oil 1/2 T fish sauce 8 oz coconut milk Bring rice to a boil, cover and simmer for 30min. When approx 15 minutes remain, heat sesame oil in skillet. Sauté garlic and the sliced green onion for approx 2-4 minutes. Add curry paste, red pepper flakes and sauté the remaining veggies. Add the shrimp and cook until no longer clear, stirring occasionally. Add the fish sauce and coconut milk, bring to slight boil and reduce to simmer. Garnish with chopped cilantro or parsley and serve over the rice. Makes 4 servings. Enjoy!

🍒I had leftover pie dough so I made a galette. Because hot summer days call for LOADED TACO SALAD BOWLS when you’re too hot and lazy to cook anything 🌮🥵🎊 The nice thing about my family eating dinner together every night is we typically have leftovers I can throw together! FOOD WASTE. I read a statistic a while ago that has stayed with me- 58% of all food produced in Canada is lost or wasted 😳 One third of that (approx $1766 per household per year) is entirely AVOIDABLE. . Having a little more time at home lately, I’ve been trying to plan out my meals, buy groceries based on what I think I can use within the week, keep a mental inventory of my pantry and get a little more creative with my leftovers! . Grilled Halibut with Caper Gremolata over Miso Carrot Puree. . . . Nothing better than a fresh fish fillet right off the grill, especially one as beautiful as this halibut. I miss my @traderjoes strolls terribly. Even though things are opening up slowly I still send hubs out for store trips because A) he needs to get every few days or he goes nuts B) we’re doing a lot to the house lately and he usually needs something at Home Depot/Lowe’s anyways. Happy Memorial Day weekend! I’ve been experimenting with making different types of lattes and decided to make a turmeric oat latte today. Super easy to make, and turmeric is supposed to be great for your health too. Let me know if you guys have any suggestions on other drinks to try out! ✨Ingredients ✨ 1/2 tsp turmeric powder (got mine from @wholefoods) 1/4 tsp grated ginger 1/4 tsp ground cinnamon Frothed oat milk Optional: honey. I personally think the drink tastes amazing without any sweeteners, but it depends on your personal preferences.

Roasted veggie tofu bowl with my light and creamy green goddess dressing 🍋 Swipe to see the drizzle! I’ve been adding this dressing to my salads, grain bowls, and even pasta for extra flavor and freshness. The usual mayo or sour cream in most green goddess dressings is replaced with hummus here, which makes it healthier but still creamy. The citrus and fresh herbs are the true stars of the show though and really brighten up the palate upon first bite! The perfect segue into summer cuisine (and also a great way to use up those herbs going bad in your fridge) 🙌🏻 Ingredients: 1/2 cup hummus (pine nut or plain work best) 3/4 cup chopped herbs of choice (I used equal parts scallion, basil, and cilantro) 2 tbsp lemon or lime juice 2 tbsp extra virgin olive oil 2 garlic cloves 1 tbsp apple cider vinegar 1 tsp maple syrup or honey Pinch of crushed red pepper Salt and pepper to taste 1-2 tbsp water to thin if necessary Instructions: Blend everything together and store in an airtight container in the fridge! Today I added the dressing to a bowl with pan-fried tofu, spinach, avocado, and all the roasted veggies (spicy sweet potatoes, peppers, and haricots verts - roasted at 425 for 30 minutes). Highly recommend! #keddellcorn

Dijon Mac and Cheese ready for dinner, per the birthday boy’s request. I stir a few tablespoons of Dijon mustard into the cheese sauce instead of the traditional dry mustard to take the flavor up a notch and make it a touch more complex. You often see this exhibited because still to this day, many trainers & fitness instructors are paid 💩 but continue to bust their butts or spend their “off hours” (from their 9-5) to make it happen. I knew I’d always work in fitness but what I didn’t know is that I’d partner with a network marketing company. (Bleh, right? I vowed to never be that salesy, in your face person). . . But God knew my heart & how I wanted to help people & gave me an opportunity to expand my reach considerably. . God knew that I longed to be at home with my babes, & gave me this opportunity to make it happen. . He knew that coaching would financially bless us & be such a gift through the realization of my heart condition. . . Ephesians 2:10 says “We are God’s handiwork, created in Christ Jesus to do good works, which God prepared in advance for us to do.” . This was never what I had intended in my life to do but I’m so glad that God prepared this in advance (& how I can see it clearly now). . If you’ve felt the tugging within you to do something for awhile now or something keeps crossing your path, I’m pretty confident it’s not just coincidence. 😉 Rise Up to what Gods calling you to, sister! He’s prepared this path for you, now you just have to trust Him and walk down it. 🙌

HEALTHY FATS ARE CRITICAL FOR YOUR HORMONES 👆🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Without good quality fats and good cholesterol all up in your diet, your body literally doesn’t have the raw materials that are needed to make hormones like estrogen, progesterone, cortisol and testosterone. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ But isn’t cholesterol bad? If we’re talking the type coming from damaged fats like vegetable oils (canola, sunflower, grapeseed, soybean, etc.) then YES. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ But fat from real, whole food provides the good type of cholesterol that we NEED in order for our body to do it’s thang - like have a healthy menstrual cycle, healthy mood and healthy libido. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Here are a few of my go-to good fat sources. I liberally add one or two to every meal👇🏼 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • Avocado/avo oil: the holy grail in every way. Make sure you cook with this for high heat temps! • Pastured eggs: those yolks are nutrient powerhouses! • Extra-virgin olive oil: arguably the most beneficial food on the planet. But keep it low heat or raw! • Hemp seeds: the perfect omega 3:6 ratio AND high in protein. • Wild-caught sardines: full of omega-3s, an essential fatty acid that’s major for brain function & anti-inflammation. If you can’t stomach them, try smoked (but always wild caught!). • Flax seeds: especially in the first half of your cycle when estrogen production is key. Make sure to store in freezer and ground fresh when you need ‘em. • Wild salmon: probably my favourite food in the world and another omega-3 powerhouse. Choose wild when you can, as the health benefits are far greater. • Coconut: oil, butter, milk, flaked - it’s a versatile magician that comes in so many delicious forms. • Ghee: clarified butter (milk solids have been removed) that’s full of nutrients & tolerable for those with dairy sensitivities. • Walnuts: shaped like a brain for a reason! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Are you already on the healthy fats train? was anyone else a fan of those huge neapolitan ice cream tubs growing up?😅 baby shiv hated chocolate ice cream (and adult shiv does too), but i whipped up a dessert where i can get behind all three layers. enter NEAPOLITAN PUDDING CUPS— ice cream’s cooler, classier big sis😛 hope you love! . . neapolitan pudding cups (gf/paleo) chocolate mousse * 2/3 cup coconut cream * 3 oz dark chocolate, chopped (i used 1 ½ bars @hukitchen) * ¼ cup honey * 2 egg whites strawberry coulis * 1 cup strawberries * 2 tbsp water vanilla custard * 2 egg yolks * ⅓ cup coconut cream * 1 cup plant milk * 2 tbsp cornstarch + 2 tbsp water * 1 tsp vanilla * ¼ cup honey directions 1. for the mousse, heat coconut cream on medium heat. in the meantime, begin whipping egg whites with a hand mixer 2. once coconut cream is warmed through, add chopped chocolate and honey. stir to dissolve, and remove from heat 3. after egg whites can form stiff peaks on the whisk, gently fold them into the chocolate mixture. be gentle to keep it fluffy! 4. add mousse to glasses or jars 5. for the coulis, bring water to a boil. add strawberries, and cook for 5 minutes or until soft 6. blend strawberries and water until smooth in texture. pour on top of chocolate mixture in each jar 7. for the custard, combine yolks, cream, milk, cornstarch slurry, and vanilla over low heat. stir constantly to keep the eggs from scrambling 8. when mixture is even in consistency, add honey 9. continue cooking custard until thick. remove from heat, and top off the jars with it! it will thicken more once chilled 10. refrigerate jars for 4-6 hours (preferably overnight). garnish with cocoa powder, berries, and more chocolate! serve cold note 1: sub arrowroot starch for cornstarch in the custard to keep this paleo note 2: to make coulis less tart and more sweet, boil 1 tbsp sugar of choice with water to make a simple syrup before cooking the strawberries. i prefer the tart version; it adds a nice contrast to the other sweet layers!

I shared my Chocolate Chip Oatmeal Raisin Cookies recipe with y’all a few weeks ago, and now I’m sharing it again because these cookies are truly to die for—I’ve made them every week since first developing them🤤Get the recipe below ⬇️and tomorrow on the blog #cookies ⁣ ⁣ Yields 18 Cookies:⁣ ⁣ Dry:⁣ 1 cup gluten-free flour ⁣ 1/2 tsp baking soda⁣ 1/2 tsp baking powder⁣ 1/2 tsp cinnamon ⁣ 1/2 tsp fine sea salt⁣ ⁣ Wet: ⁣ 1/2 cup grass-fed butter, room temp (or softened coconut oil) ⁣ 1 cup coconut sugar ⁣ 1 egg⁣ 1/2 tablespoon vanilla ⁣ ⁣ Mix in: ⁣ 1 1/2 cups rolled oats ⁣ 1 cup mini chocolate chips ⁣ 1 cup seedless raisins ⁣ ⁣ 1. Preheat the oven to 350 degrees F. Line two baking sheets with párcheme to paper. Set aside.⁣ 2. Add the dry ingredients to a medium bowl and whisk until combined. Set aside. ⁣ 3. In a stand mixer using the paddle attachment, cream the butter and coconut sugar together on high speed until smooth and creamy. Add the egg and vanilla. Mix on medium speed until combined. ⁣ 4. Add the dry ingredients in with the wet and mix on low until the flour is just combined. Scrape down the sides as needed. ⁣ 5. Using a rubber spatula, fold in the oatmeal, chocolate chips, and raisins. ⁣ 6. If you want your cookies to spread (as pictured) there’s no need to chill the dough. If you want them to have more rise and chew, refrigerate for 30 min up to overnight. ⁣ 7. Scoop 2 tablespoons of dough and roll into a ball. Place on prepared baking sheet 2 inches apart. Bake for 11-14 minutes (as some oven temps vary). ⁣ 8. Remove from oven and allow cookies to cool for 10 minutes.⁣ Enjoy!!⁣
