Craving for cookies while on a low-carb diet?

Well technically, I used Roasted Cacao Nibs because aside from being healthier than chocolate chips, it's what I have. Haha
What typically ruins my ultimate plan to lose weight is my love for desserts. Yup, I do have a sweet tooth and it would happily devour on chocolates, cake, cookies, and ice cream. Not being able to eat rice is not a huge deal for me but desserts? That's a different story.
So excited to share with you this grain-free and sugar-free cookie recipe. These cookies are made of almond flour and taste like the real deal I could cry right now. 😭😭😭I finally have a treat that can go with my after-meal coffee.
The reason why I like to cook and bake my own food is that I know what goes to my body. The sugar substitute that I currenty use is Erythritol. Yeah, it does sound like a scary, hard-to-pronounce chemical but a simple Google search will tell you that it is actually a natural low-calorie sweetener (it is a sugar alcohol, which is different from sugar itself) that does not raise blood sugar. Amazing, right? You can find it online or specialty shops. For this recipe, I don't recommend other sweeteners as it will have a different outcome like being too flat, hard, burnt, etc.
Try these cookies! They are more on the crispy, rather than the chewy side. Marvin couldn't believe they're not made from regular flour and sugar. You can give these to your parents without having to worry about their blood sugar level. That being said, these cookies are meant to be treats so please, as much as you are tempted, don't finish the entire batch. Also, the ingredients are quite pricey so pace yourself. 😜
